750g (aprox 3c) potatoes, skinned, boiled, & riced/mashed
150g (aprox 1c) flour, sifter
75g (1/3c) butter, room temp
1 tsp salt
Directions:
Mix potatoes, butter, & salt.
Taste potatoes & ass additional salt if needed.
Slowly sifter in flour until mixture forms a dough.
Form into 2 balls of dough.
Flatten ball to 1cm thing rounds.
Cut rounds into 4's.
Heat griddle on medium / medium-high heat, do not oil pan.
Brown on both sides.
Can be eaten as is or fried in a little butter after browned.
*Breakfast: serve with sautéed mushrooms, wilted spinach in butter, & beans.
