Preheat 375F Bake: 20-30 min
Eyeball Ingredients:
- 2 lbs ground chicken breast
- 1 egg
- 1/2 c bread crumbs
- 1/2 c milk
- 3/4 c freshly grated Parmesan cheese
- 1 tsp ground fennel seeds
- oregano, basil & thyme to taste
- a generous amount of garlic & onion powder
- salt and pepper to taste
- 1 can pre-pitted black olives
- 1 larger can of tomato paste (it was a little more than a cup)
- 1/4 c freshly grated Parmesan cheese

- water to thin—about 1 1/2 cups
- Spaghetti Noodles
- Combine all chicken ingredients except olives & set aside.
- Combine all sauce ingredients in a pot and heat over medium low.
- Grease a large rimmed cookie sheet with oil.
- Form eyeball sized balls & shove an olive into the center of each one.
- Arrange eyeballs on baking sheet 1 in away from one another.
- Bake until cooked through.
- Boil spaghetti noodles as package directs (without using oil). Drain.
- Let noodles cool than squeeze handfuls together to form "brains".
- Place brains on plates topped with eyeballs over blood sauce.
