Red Potato and Bacon Casserole

Preheat: 350F Bake: 1 hour; 20-25 min Serves: 6-8

Ingredients 
  • 1 1/2 lb red potatoes
  • 1/4 tsp salt 
  • 1/4 tsp pepper 
  • 1 lb bacon; sliced, cooked, & crumbled 
  • 3 c sour cream 
  • 4 c shredded cheese
  • 2 green onions, sliced
Directions
  1. Bake potatoes.
  2. While potatoes are baking lightly grease a 9x13" baking dish
  3. Cube potatoes into 1" squares, placing 1/2 in the baking dish.
  4. Sprinkle half of the salt, pepper and bacon over potatoes.
  5. Top with half of the sour cream and cheese.
  6. Repeat layers. 
  7. Bake, uncovered, at 350° for 20-25 minutes or until cheeses are melted.
  8. Sprinkle with onions.
